Saffron could stop blindness

Italian scientists say they have found that saffron may hold the key to stopping vision loss as people age and in treating some eye diseases. The scientists at ARC Centre of Excellence in Vision Science and University of L’Aquila, in Italy, suggest the spice could reverse the course of blinding diseases and may hold one of the keys to preventing the loss of sight in old age. The researchers led by Professor Silvia Bisti have shown that saffron has remarkable effects on the genes which regulate the performance of the eye’s key vision cells and not only protects the vision cells (photoreceptors) from damage, but may also slow and possibly even reverse the course of blinding diseases such as age-related macular degeneration (AMD) and retinitis pigmentosa.

About saffron

Saffron is a spice derived from the flower of Crocus sativus, commonly known as the saffron crocus. Crocus is a genus in the family Iridaceae. Saffron crocus grows to 20–30 cm (8–12 in) and bears up to four flowers, each with three vivid crimson stigmas, which are the distal end of a carpel. Together with the styles, or stalks that connect the stigmas to their host plant, the dried stigmas are used mainly in various cuisines as a seasoning and colouring agent. Saffron, long among the world's most costly spices by weight is native to Southwest Asia, especially Iran. To glean 1 lb (450 g) of dry saffron requires the harvest of 50,000–75,000 flowers; a kilogram requires 110,000–170,000 flowers. Forty hours of labour are needed to pick 150,000 flowers. Stigmas are dried quickly upon extraction and (preferably) sealed in airtight containers.

Trade Saffron

Saffron, because of its aroma, color and flavor has different usage in producing food, medical and chemical products, is counted as an expensive product. Almost all saffron grows in a belt bounded by the Mediterranean in the west, and the rugged region encompassing Iran and Kashmir in the east. The other continents produce smaller amounts. Iran answers for around 90–93% of global production (between 200 to 300t yearly) and exports much of it.

Saffron Grades

Saffron is not all of the same quality and strength. Strength is related to several factors including the amount of style picked along with the red stigma. Age of the saffron is also a factor. The colour and flavour are concentrated in the red stigmas. Saffron from Iran is classified into various grades according to the relative amounts of red stigma and yellow styles it contains. Grades of Iranian saffron are: "Negin" (the best one, contains the red part of stigma and has longer tips) "sargol" (red stigma tips only), "pushal" or "pushali" (red stigmas plus some yellow style, lower strength), "bunch" saffron (red stigmas plus large amount of yellow style, presented in a tiny bundle like a miniature wheat sheaf) and "konge" (yellow style only, claimed to have aroma but with very little).

Bunched

Dasteh is a special type of clustering saffron. Before the saffron is dried, the entire filaments (consisting of whole the red and yellow part) are grouped in a bunch and a rope is tied around them.

Sargol

Pure Stigmas of saffron cut exactly from the red part are called Sargol. It has great coloring strength and rich aroma. But Sargol in comparison with Negin consists of shorter threats.

Pushal

The conventional type of saffron consisting of uncut and intact saffron stigmas mostly connected each three to the stem. The degree of its strength is a little lower than Negin and Sargol.

Negin

Negin saffron, which is known as the best grade of saffron, is the red part of the pure saffron stigmas with longer threats. The yellowish part of the threads is removed, one by one, resulting in saffron with higher coloring and aromatic power. Negin is more prestigious and has a better appearance in comparison with Sargol.
